Baked Tomato Chickpeas

Serves: 1 pot
  • 2 x 400g Tins of Chickpeas (drained & rinsed)
  • 150g Sun-dried Tomatoes
  • ½ tsp Chilli Powder
  • 3 tbsp. Olive Oil
  • 1 tbsp. Tomato Puree
  • 1 tbsp. Apple Cider Vinegar
  • Salt & Pepper
  1. Preheat the oven to 180C (fan 160C)
  2. Put the chickpeas into a bowl and set aside
  3. In a mini food processor add all of the rest of the ingredients and blitz
  4. Add this mixture to the chickpeas and mix well together
  5. Place onto a baking tray so the chickpeas are in a single layer and place in the oven for 20-30 mins until they are firm but no crunchy
  6. You can eat these as a nibble, add them to salads, have them as a side dish to any meal - just great to have in the fridge
