Such a simple and yummy banana bread, so healthy
  • 5 x Over-Ripe Bananas
  • 100g Almonds
  • 200g Pecans
  • 100g Buckwheat or Brown Rice Flour
  • 50g Maple Syrup
  • 3 tbsp. Chai Seeds
  • 2 tbsp. Cinnamon
  1. Preheat over to 145C
  2. Put the almond and pecans in a food processor and blend until you have a flour like consistency. Place this in a mixing bowl along with the buckwheat flour, maple syrup, chia seeds and cinnamon. Stir together
  3. Place the bananas into the food processor and blitz until a nice smooth paste, add this to the dry ingredients and stir until well combined
  4. Grease a loaf tin with coconut oil, pour the mixture in and bake for about an hour until a knife comes out clean
