Chia Seed and Quinoa Bread

A gluten-free bread made with chia seeds and quinoa

  • 340g Quinoa
  • 120g Chia Seeds
  • 240ml Water
  • 60ml Olive Oil
  • 1 tsp Bicarbonate of Soda
  • 1 tsp Maple Syrup
  • 3 tbsp Fresh Lemon Juice
  • Generous pinch of salt
  • 70g Mixed Seeds
Instructions
  1. You need to be one step ahead as the quinoa and chia seeds need soaking overnight
  2. Place the quinoa and chia seeds in separate bowls and pour 240ml water over the chia seeds and enough water over the quinoa to cover it well. Place both bowls in the fridge to soak overnight
  3. When ready to bake, preheat the oven to 160C/fan 140/Gas 3 and grease a 450g loaf tin with olive oil and baking parchment
  4. Drain the quinoa and place half of it in a blender with the chia seeds, bicarbonate of soda, maple syrup. olive oil and lemon juice
  5. Blend until the mixture is almost smooth, then stir in the other half of the quinoa
  6. Pour the mixture into the loaf tin and scatter the seeds over the top
  7. Place in the oven and bake for around 70 mins or until you can stick a skewer or sharp knife into the loaf and it comes out clean
