Another simple and full of goodness stew, you will feel so healthy with all those chickpeas and edamame beans
Serves: 2
  • 1 tbsp. Coconut Oil
  • 1 x Onion (diced)
  • 2 x Garlic Cloves (crushed)
  • 200g Button Mushrooms
  • 1 x Green Chilli (deseeded and finely chopped)
  • 1 x 440g Chickpeas (drained)
  • 2 tsp Tamari
  • 1 x 440g Coconut Milk
  • 100g Edamame Beans
  1. Heat the coconut oil and onion in a medium pan and cook for 5 mins. Add the garlic, mushrooms, chilli and cook for a further minute. Add the chickpeas, tamari and coconut milk - stir well and simmer
  2. Simmer for 15 mins and then add the edamame beans - allow them to heat through
  3. Serve
