All-Day Breakfast Frittata

A great frittata to get your 5 a day in - you can also eat cold the next day - perfect
Serves: 2
  • 2 x Rashers Bacon (all fat removed)
  • 125g Mushrooms (thinly sliced)
  • 75g Spinach
  • 75g Chorizo (thinly sliced)
  • 100g Cherry Tomatoes (halved)
  • 4 x Medium Eggs (beaten)
  1. In a non stick frying pan, grill the bacon and set aside. Then lightly cook the chorizo, set aside. Then cook the mushrooms until soft and set aside
  2. Rinse the spinach under cold water and drain it in a sieve. Add to the pan and cook for a couple of minutes, when cook place back in the sieve and squeeze out any excess water - set aside
  3. In a separate bowl beat the eggs, then add the chopped bacon, chopped spinach, chorizo, tomatoes. Place all of this into your large frying pan and cook gently over a medium heat until the eggs are cooked through
  4. Eat by itself or serve with a green salad for more goodness
