A simple delicious healthy chicken soup, perfect for lunch and supper
Serves: 6
  • 1 tbsp. Coconut Oil
  • 2 x Onions (finely diced)
  • 2 x Celery Sticks (finely chopped)
  • 2 x Carrots (finely diced)
  • 25g Buckwheat or Brown Rice Flour (optional)
  • 1.2l Chicken Stock
  • 450g Cooked Chicken (or brown your uncooked chicken and add)
  • 1 tbsp. Fresh Parsley (finely chopped)
  • Salt & Pepper to taste
  1. Melt the coconut oil in a large saucepan over a medium heat and gently cook the onions, celery and carrots until they start to soften
  2. Stir in the flour (if using) and cook for 2 mins. Add the chicken stock and bring the mixture to the boil stirring as you do so. Reduce the heat and allow t simmer for 10 mins until the vegetables are tender
  3. Add the cooked chicken and cook until heated through, season with salt and pepper and serve with parsley
  4. IF using uncooked chicken then add it in with the chicken stock and simmer for 20 mins
