A healthy jam to rival any store-bought jam

Ingredients
  • 600g fresh or frozen Raspberries, Blackberries or Strawberries
  • 3 or 4 tbsp Maple Syrup
  • 2 tbsp Chia Seeds
  • 1 tsp Vanilla Extract
Instructions
  1. In a medium saucepan, place the berries and the maple syrup, bring to a simmer stirring frequently for about 5 mins
  2. Stir in the chia seeds and cook through, stir frequently for around 15 mins
  3. Once the jam is thick, remove from the heat and stir in the vanilla extract, add more maple syrup if you require a sweeter jam
  4. Store in an airtight jar in the fridge for 1-2 weeks
