Roasted Red Peppers & Pesto Frittata

A delicious frittata with roasted red pepeprs, pesto and rocket
Serves: 4-6
  • 1 tbsp. Coconut Oil
  • 1 x Onion (diced)
  • 3 x Garlic Cloves (crushed)
  • 8 x Eggs (whisked)
  • 1 x Jar of Roasted Red Peppers (drained and chopped)
  • 2 x Handfuls of Rocket
  • 1 x Mozzarella Ball (shredded)
  • 3 or 4 tbsp. Green Pesto
  1. In a large pan, heat the coconut oil and add the onion and fry until soft, add the garlic and sauté for 1-2 mins, then take off the heat
  2. In a separate bowl, stir together the eggs, roasted red peppers, rocket, mozzarella, pesto and add the onion and garlic
  3. Heat the pan back up onto a medium heat and pour in the mixture and allow to cook very gentle through. Dip to one side to make the uncooked mixture go to the bottom. Once cooked through, serve and enjoy
