Ingredients
- 25g Creamed Coconut (from a block)
- 2 tsp Coconut Sugar
- 1 tsp Fish Sauce
- 2 tsp Thai Green Curry Paste
- 1 x Chicken Breast
- To serve - handful of coriander leaves and lime wedge
Instructions
- Preheat over to 200C/fan 180C
- Dissolve the creamed coconut with 3 tbsp. boiling water and mix to a smooth paste Stir in the coconut sugar, fish sauce and curry paste
- Lay the chicken breast on a roasting tray and pour over the sauce. Place in the oven and cook for 15-20 mins until the chicken breast is cooked through
- Serve with whatever you fancy - couscous salad, sweet potato fries, a simple salad
