A great chicken dish that you can eat with roasted sweet potatoes, a couscous salad, a plate of greens - you chose
Serves: 1
  • 25g Creamed Coconut (from a block)
  • 2 tsp Coconut Sugar
  • 1 tsp Fish Sauce
  • 2 tsp Thai Green Curry Paste
  • 1 x Chicken Breast
  • To serve - handful of coriander leaves and lime wedge
  1. Preheat over to 200C/fan 180C
  2. Dissolve the creamed coconut with 3 tbsp. boiling water and mix to a smooth paste Stir in the coconut sugar, fish sauce and curry paste
  3. Lay the chicken breast on a roasting tray and pour over the sauce. Place in the oven and cook for 15-20 mins until the chicken breast is cooked through
  4. Serve with whatever you fancy - couscous salad, sweet potato fries, a simple salad
